Caramelised Nuts

I decided that I am going to make homemade sweets. This came about from a Facebook post about honey combs - this is my next project by the way. So after surfing (the net off course) for a while, I found a simple recipe for caramelised nuts. I tried them out this morning and have to say they came out perfect. Ok, I could do better but for a first attempt it was perfect.

4tbsp brown sugar
1tbsp liquid glucose
1tbsp butter
1cup nuts of your choice (I used pecans, walnuts, almonds and cashews)

Put the sugar, butter and liquid glucose in a non stick pan. Set the stove to medium heat and stir the mixture together until it bubbles. Add the nuts and stir until all the nuts are coated with a glaze. (I should have let the mixture cook a little longer before I added the nuts).
Continue stirring and let cook for about 5-7 minutes or until they turn golden brown. Transfer the cooked nuts onto a piece of foil (you can use a fork at this stage to separate the nuts so that they are all not stuck together) or parchment paper to cool. Let them cool down completely. Store in an airtight container.

Even hubby enjoyed them. Every time I tell him that I am going to attempt something new he gives me this look like "what is she going to come up with this time?" Can't blame him though as some attempts at new things did not go down well with the family.
I think the next time I make them, I am going to add a little salt to the mixture so you have the sweet with a tinge of the salty, like sweet and salty popcorn.
These would be really great as party snacks (you will have to make a lot though as they will not last long) or even as a gift.
